No-Bake Peanut Butter Bars

These no-bake peanut butter bars come together quickly with a simple mixture of peanut butter, powdered sugar, and graham cracker crumbs pressed into a pan. Once chilled, they develop a firm, chewy texture with a smooth, peanut buttery flavor and a hint of sweetness, topped with a chocolate layer for added richness.

Ingredients

  • 1 cup peanut butter creamy or chunky as preferred
  • 1 cup powdered sugar sifted for smoothness
  • 1 1/2 cups graham cracker crumbs about 10 full crackers crushed finely
  • 1/2 cup butter melted
  • 1 cup semi-sweet chocolate chips for topping

Equipment

  • Mixing bowl
  • 8x8 inch Pan
  • Spatula
  • Microwave or Double boiler

Method

  1. Combine peanut butter, powdered sugar, graham cracker crumbs, and melted butter in a mixing bowl. Stir until the mixture is smooth and well incorporated, resembling a thick, sticky dough.
  2. Press the peanut butter mixture evenly into an 8x8 inch pan lined with parchment paper or lightly greased. Use a spatula or your hands to flatten the surface smoothly.
  3. Place the pan in the refrigerator for at least 30 minutes to chill and firm up the bars.
  4. Meanwhile, melt the chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth and glossy.
  5. Pour the melted chocolate evenly over the chilled peanut butter layer, spreading it out with a spatula to create a smooth, glossy top.
  6. Refrigerate for another 15-20 minutes until the chocolate is set and firm.
  7. Once the chocolate has hardened, remove the pan from the fridge and cut into 12 equal squares or bars.
  8. Serve your no-bake peanut butter bars immediately or store in an airtight container in the refrigerator for up to a week.

Notes

For a richer chocolate topping, add a teaspoon of coconut oil when melting the chocolate.
