  • 1/2 cup (120 ml) honey
  • 1/4 cup (60 g) butter or coconut oil
  • 2 cups (160 g) rolled oats old-fashioned preferred for heartier texture
  • 1/2 cup (75 g) chopped nuts almonds, walnuts, or your choice
  • 1/4 teaspoon salt pinch to enhance flavors
  • 1/4 cup (40 g) dried fruit cranberries, apricots, or cherries

Method
 

  1. Line your square pan with parchment paper, leaving overhang for easy removal, and set aside.
  2. In a saucepan over medium-low heat, combine honey and butter or coconut oil. Warm gently, stirring occasionally, until the mixture melts and becomes fragrant, about 2-3 minutes.
  3. Meanwhile, in a large mixing bowl, toss together the rolled oats, chopped nuts, salt, and dried fruit to distribute evenly.
  4. Pour the warm honey mixture over the dry ingredients, then stir with a spatula until everything is coated and sticky, forming a cohesive mixture.
  5. Transfer the mixture into the prepared pan. Use the spatula to press it down firmly, spreading evenly across the pan surface. Pressing helps the bars hold together and creates a compact texture.
  6. Let the mixture cool for at least 30 minutes at room temperature, or place in the fridge for about 15 minutes to speed up the setting process. The mixture should become firm and easy to cut.
  7. Once cooled and firm, lift the mixture out of the pan using the parchment overhang. Place on a cutting board and cut into 8-10 bars with a sharp knife, wiping the knife clean between cuts for neat edges.
  8. Store the bars in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week. For longer storage, wrap individually and freeze for up to a month. Reheat briefly in the microwave if desired before enjoying.

Notes

Feel free to customize with your favorite nuts and dried fruits. For a vegan version, substitute honey with maple syrup or agave nectar. Press firmly for clean cuts, and chill thoroughly to ensure the bars hold together well.
