  • 1 cup rolled oats preferably toasted lightly for richer flavor
  • 1/2 cup chopped nuts almonds or walnuts work well
  • 1/4 cup seeds sunflower or chia seeds
  • 1 cup pitted dates chopped into small pieces
  • 1/4 cup nut butter almond, peanut, or cashew, warmed slightly
  • 2 tablespoons honey or maple syrup adjust for desired stickiness

Method
 

  1. Gather your ingredients: toasted oats, chopped nuts, seeds, chopped dates, nut butter, and honey. Place the dry ingredients into a large mixing bowl and stir to combine evenly.
  2. Add the chopped dates to the bowl, tossing them with the dry ingredients to coat and distribute evenly.
  3. Warm the nut butter slightly in the microwave for about 20 seconds until it’s runny and smooth. Pour it over the mixture.
  4. Add the honey or maple syrup to the bowl. Use a spatula to thoroughly mix everything until the mixture is sticky and well-coated, feeling slightly tacky but holding together when pressed.
  5. Use a cookie scoop or your hands to portion out the mixture into small, tight balls about 1 inch in diameter. Place each ball on the parchment-lined baking sheet.
  6. Refrigerate the energy balls for at least 30 minutes to help them set and firm up.
  7. Once chilled, the energy balls are ready to enjoy. Keep them stored in an airtight container in the fridge for up to a week, or freeze for longer storage.

Notes

For added flavor, toast the nuts and seeds lightly before mixing. Adjust sweetness by varying honey or maple syrup. Feel free to add chocolate chips or dried fruit for extra fun.
