Method
 

  1. Line an 8x8 inch dish with parchment paper, leaving some overhang for easy removal.
  2. Combine the chocolate and butter in a microwave-safe bowl. Microwave in 30-second bursts, stirring each time, until the mixture is smooth and glossy, about 1 to 1.5 minutes.
  3. Toast the oats in a dry skillet over medium heat until fragrant and lightly golden, about 3-5 minutes. Let them cool slightly.
  4. Stir together the peanut butter, honey, and a pinch of sea salt in a mixing bowl until smooth and slightly runny.
  5. Add the toasted oats and chopped peanuts to the peanut butter mixture. Fold gently until everything is coated and sticky.
  6. Pour the melted chocolate into the mixture. Fold until all ingredients are evenly combined and coated in chocolate.
  7. Transfer the mixture into your prepared dish. Use a spatula to press it firmly into the pan and smooth the top.
  8. Place the dish in the fridge for at least 2 hours, or freeze for about 1 hour, until the bars are firm and set.
  9. Once set, lift the entire block out of the dish using the parchment overhang. Slice into 12 even squares with a sharp knife.
