Ingredients
  

  • 200 grams dark chocolate good quality, chopped into pieces
  • 2 tablespoons unsalted butter
  • 3 cups crispy rice cereal
  • 1 tablespoon honey or golden syrup
  • 1 teaspoon vanilla extract
  • a pinch salt

  • Parchment paper
  • Heatproof bowl
  • Spatula

Method
 

  1. Line your square baking dish with parchment paper, leaving some overhang for easy removal.
  2. Place the chopped dark chocolate in a heatproof bowl.
  3. Set the bowl over a pot of simmering water, making sure the water doesn’t touch the chocolate, and gently melt, stirring occasionally, until smooth and glossy.
  4. Once melted, stir in the butter and continue stirring until fully combined and glossy.
  5. Pour in the honey and vanilla extract, mixing well to incorporate all the flavors.
  6. Remove the bowl from heat and gently fold in the crispy rice cereal until evenly coated with the chocolate mixture.
  7. Transfer the mixture into the prepared dish and use the back of a spatula to press it down firmly and evenly, creating a compact layer.
  8. Place the dish in the fridge and chill for at least 2 hours, or until the bars are set and firm.
  9. Once set, lift the mixture out using the parchment overhang and place on a cutting board.
  10. Use a sharp knife to cut into squares or rectangles, wiping the knife clean between cuts for neat edges.
  11. Serve immediately or store in an airtight container in the fridge for up to a week. Enjoy the perfect crunch and rich chocolate flavor!
