Ingredients

  • 2 cups freshly brewed black tea cooled
  • 1 cup fresh basil leaves plus extra for garnish
  • 1/4 cup fresh lemon juice about 2 lemons
  • 1 /4 cup granulated sugar
  • 1 cup water hot or boiling
  • 1 cup additional cold water to adjust consistency
  • ice cubes as needed ice for blending

Equipment

  • Kettle or pot for boiling water
  • Tall blender or food processor
  • Measuring cups and spoons
  • Fine-mesh strainer
  • Freezer-safe container

Method

  1. Brew the black tea and let it cool completely to room temperature, which takes about 10 minutes.
  2. Add fresh basil leaves and granulated sugar into a heatproof cup, then pour hot water over it, stirring until the sugar dissolves completely. Allow the basil to steep for 5 minutes, releasing its fragrant oils.
  3. Strain the basil syrup through a fine-mesh strainer into a bowl or jar, removing all basil leaves and debris.
  4. In the blender, combine the cooled brewed tea, basil syrup, fresh lemon juice, and an additional cup of cold water. Blend on high until well mixed and fragrant, about 30 seconds.
  5. Fill the blender halfway with ice cubes and pulse several times to crush the ice slightly, then blend until the mixture is slushy and smooth, about 15 seconds.
  6. Pour the icy tea mixture into tall glasses, adding more ice if desired for an extra chill.
  7. Garnish each glass with a sprig of fresh basil and a twist of lemon for a colorful finish.
  8. Serve immediately with a straw or spoon, enjoying the bright, icy, herbal flavors.
