As the leaves crunch underfoot and the air turns crisp, I find myself craving more than just candy this Halloween. I love transforming a simple dinner into a spine-tingling spectacle, and this eyeball pasta does just that. It’s a gory delight that sparks both nostalgia and chaos, perfect for a haunted dinner party.

Method
- Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente. Drain and set aside.
- Heat olive oil in a saucepan over medium heat and pour in the tomato sauce. Simmer gently for 5-7 minutes, stirring occasionally, until warmed through and slightly thickened.
- Slice the black olives into small rounds, which will be used as the pupils for the eyeballs. Cut mozzarella into large balls about 1.5 inches wide for the eyeballs.
- Transfer the cooked spaghetti to a serving platter and pour the warm tomato sauce evenly over it, tossing gently to coat every strand.
- Place large mozzarella balls on top of the sauced spaghetti, spacing them out evenly to resemble eyeballs.
- Using the sliced black olives, place one small olive on each mozzarella ball to form the pupil. Add a pinch of red pepper flakes around for a spicy, gory effect if desired.
- Sprinkle a little salt over the dish to enhance flavor and false blood effects from the red pepper flakes.
- Serve immediately, allowing the spooky sights of the eyeballs and gory accents to impress all at your Halloween gathering.
Notes
For extra gore, add thin slices of red bell pepper or use red food coloring in the sauce.
